  • 1 tsp chilli flakes Add heat; omit for milder flavors.
  • 1 tsp dried oregano Offers a fresh, herbal note.
  • 1 tsp dried parsley A light flavor; fresh is brighter.
For Serving
  • 4 flatbreads Soft vessels for wrapping.
  • sliced red onion Crunchy topping for texture.
  • crumbled feta Creamy, salty addition.
  • cherry tomatoes, chopped Sweet and juicy, adds color.
  • hot sauce For an extra kick.
  • Greek yogurt or mayonnaise Adds creaminess; yogurt gives tang.

Method
 

Preparation
  1. Preheat the oven to 200C/400F (fan).
  2. Combine all of the kebab ingredients, except for the spray oil, in a mixing bowl.
  3. Prepare a sheet pan by lining it with baking parchment and giving it a light spray of oil.
  4. Spread the meat mixture onto the tray and flatten to about ½ inch thickness.
  5. Slice through the mixture into 8 strips.
  6. Bake in the oven for 12-15 minutes until browned and cooked through.
  7. Serve with flatbreads and toppings.
