Preparation
- Cream softened butter and aged Parmesan together in a large bowl until fluffy, about 2-3 minutes.
- Gradually mix in all-purpose flour, fresh rosemary, salt, and cracked black pepper until fully incorporated. Add lemon zest if desired.
- Shape the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Dust your work surface with flour, roll out the dough to about 1/4 inch thick, and cut out cookies with a snowflake cookie cutter.
- Chill the cut cookies on the baking sheet in the refrigerator for an additional 10 minutes.
- Preheat the oven to 350°F (180°C) and bake for 12-15 minutes until lightly golden.
- Cool cookies on a wire rack before serving.
