  • 1 teaspoon Salt Light sprinkle to enhance flavor
  • 1 teaspoon Cracked Black Pepper Adjust to taste
  • 1 teaspoon Lemon Zest Optional, fresh
For the Cutting and Baking
  • 1 cup Flour For dusting
  • 1 piece Snowflake Cookie Cutter Or any festive shape desired

Method
 

Preparation
  1. Cream softened butter and aged Parmesan together in a large bowl until fluffy, about 2-3 minutes.
  2. Gradually mix in all-purpose flour, fresh rosemary, salt, and cracked black pepper until fully incorporated. Add lemon zest if desired.
  3. Shape the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  4. Dust your work surface with flour, roll out the dough to about 1/4 inch thick, and cut out cookies with a snowflake cookie cutter.
  5. Chill the cut cookies on the baking sheet in the refrigerator for an additional 10 minutes.
  6. Preheat the oven to 350°F (180°C) and bake for 12-15 minutes until lightly golden.
  7. Cool cookies on a wire rack before serving.
