Method
 

Cooking Steps
  1. Preheat oven to 450°F (232°C) for roasting the pork tenderloin.
  2. Pat the pork tenderloin dry with paper towels and rub with rosemary, thyme, onion powder, salt, pepper, and crushed garlic.
  3. Heat olive oil in a cast iron skillet over medium-high heat, sear the tenderloin for 1-2 minutes per side.
  4. Roast the pork in the oven for about 12 minutes until its internal temperature reaches 145°F (63°C).
  5. Remove from oven, cover with foil, and allow to rest for 5-10 minutes.
  6. Return the skillet to medium heat, add beef broth and balsamic vinegar, whisk to deglaze, and boil until reduced by half.
  7. Stir in capers and butter, adjust seasoning, then slice the pork and drizzle with sauce.
