Cooking Steps
- Preheat oven to 450°F (232°C) for roasting the pork tenderloin.
- Pat the pork tenderloin dry with paper towels and rub with rosemary, thyme, onion powder, salt, pepper, and crushed garlic.
- Heat olive oil in a cast iron skillet over medium-high heat, sear the tenderloin for 1-2 minutes per side.
- Roast the pork in the oven for about 12 minutes until its internal temperature reaches 145°F (63°C).
- Remove from oven, cover with foil, and allow to rest for 5-10 minutes.
- Return the skillet to medium heat, add beef broth and balsamic vinegar, whisk to deglaze, and boil until reduced by half.
- Stir in capers and butter, adjust seasoning, then slice the pork and drizzle with sauce.
