Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
- Prepare the garlic by cutting each clove in half and making small slits in the pork loin to insert the garlic.
- In a medium bowl, mix remaining garlic, Italian seasoning, salt, pepper, Dijon mustard, paprika, and olive oil to form a rub. Apply liberally over the pork loin.
- In a separate bowl, toss the baby red potatoes, carrots, parsnips, rutabaga, and turnip with olive oil, apple cider vinegar, and seasoning.
- Layer the seasoned root vegetables on the prepared baking sheet, then place the pork loin on top and insert a meat thermometer.
Cooking
- Roast the pork in the oven for about one hour, until the internal temperature reaches 145°F to 160°F (63°C to 71°C).
- Remove the pork loin from the oven and let it rest for 10-15 minutes.
- Slice the roast and serve alongside the warm root vegetables, garnishing if desired.
