Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Prepare the garlic by cutting each clove in half and making small slits in the pork loin to insert the garlic.
  3. In a medium bowl, mix remaining garlic, Italian seasoning, salt, pepper, Dijon mustard, paprika, and olive oil to form a rub. Apply liberally over the pork loin.
  4. In a separate bowl, toss the baby red potatoes, carrots, parsnips, rutabaga, and turnip with olive oil, apple cider vinegar, and seasoning.
  5. Layer the seasoned root vegetables on the prepared baking sheet, then place the pork loin on top and insert a meat thermometer.
Cooking
  1. Roast the pork in the oven for about one hour, until the internal temperature reaches 145°F to 160°F (63°C to 71°C).
  2. Remove the pork loin from the oven and let it rest for 10-15 minutes.
  3. Slice the roast and serve alongside the warm root vegetables, garnishing if desired.
