Ingredients
  

For the Fritters
  • 1 cup Flour Swap with gluten-free flour for a gluten-free option.
  • 1 tbsp Baking Powder
  • 1 tsp Salt A generous pinch is key.
  • 1 tbsp Sugar Optional but recommended for balance.
  • 1 tsp Chilli Flakes Optional for a touch of heat.
  • 1 cup Water Gradually added for batter consistency.
  • 4 medium Onions Can also use spring onions or leeks.
  • 1 cup Feta Cheese Crumpled; omitting it still works for flavorful fritters.
  • Canola Oil For frying.
For the Dipping Sauce
  • 1 tbsp Sugar Sweetens the sauce base.
  • 1 cup Water Forms the syrupy base.
  • 3 tbsp Soy Sauce Substitute with tamari for gluten-free.
  • 1 tbsp Fish Sauce Optional.
  • 1 tbsp Vinegar Brings balance through acidity.
  • 1 medium Red Chilli Thinly sliced.
  • 1 clove Garlic Thinly sliced.
  • 2 cm Ginger Thinly sliced.

Method
 

How to Make Onion and Feta Fritters
  1. Thinly slice two onions and finely chop the remaining two.
  2. Whisk together flour, baking powder, salt, sugar, and optional chilli flakes. Gradually add water until smooth consistency.
  3. Gently fold in sliced and diced onions along with crumbled feta cheese.
  4. Heat canola oil in a frying pan until hot, about 2 cm deep.
  5. Drop tablespoons of the batter into the hot oil, frying until golden and crispy, around 3-4 minutes per side.
  6. Remove fritters from the oil and drain on paper towels.
  7. Combine all sauce ingredients in a saucepan and simmer for 5-10 minutes until syrupy.
  8. Serve hot with sweet chilli soy dipping sauce.
