Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add chopped mushrooms and shallots, sautéing until softened, about 5-7 minutes.
- Roll out the puff pastry and cut it into squares or circles.
- Place a generous spoonful of the filling on the pastry and add a dollop of herbed goat cheese on top.
- Fold and seal the edges of the pastry.
- Bake for 20-25 minutes until golden brown and puffed.
- Garnish with fresh herbs and serve hot or at room temperature.
