Ingredients
  

For the Potatoes
  • 1 pound Baby potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Kosher salt
For the Toppings
  • 1 cup Sour cream
  • 1/2 cup Bacon bits
  • 1/4 cup Chives Chopped

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, toss the baby potatoes with olive oil until evenly coated.
  3. Spread the potatoes on a baking sheet and sprinkle generously with kosher salt.
  4. Bake for 30-35 minutes or until fork-tender and golden brown, shaking the pan halfway through.
  5. Let the baked potatoes cool for about 5 minutes, then cut a wedge out of each potato.
  6. Fill each wedge with sour cream and top with bacon bits and chopped chives.
