- Preheat your oven to 375°F (190°C).
- In a mixing bowl, toss the baby potatoes with olive oil until evenly coated.
- Spread the potatoes on a baking sheet and sprinkle generously with kosher salt.
- Bake for 30-35 minutes or until fork-tender and golden brown, shaking the pan halfway through.
- Let the baked potatoes cool for about 5 minutes, then cut a wedge out of each potato.
- Fill each wedge with sour cream and top with bacon bits and chopped chives.
