How to Make Mafe (Maafe)
- Wash and cut the stew beef into smaller pieces for even cooking.
- Heat olive oil in a pan over medium heat, add the beef with black pepper and a pinch of salt. Sauté for 8-10 minutes, until the meat is browned.
- Chop the onion and red bell pepper, then add them to the pan. Sauté for an additional 3 minutes.
- Stir in the tomato paste and let it cook for 5 minutes.
- Pour in water, stock, and add beef bouillon powder and cayenne pepper, adjusting salt to taste. Bring to a boil and cook for 5 minutes.
- Stir in the peanut butter until it’s fully dissolved. Let it simmer until the stew thickens, around 2-5 minutes.
- Enjoy your Mafe over cauliflower rice or regular rice.
