  • 1 lb Stew Beef
  • 1/2 cup Peanut Butter opt for natural
  • 1 large Red Bell Pepper
  • 2 tbsp Tomato Paste
  • 1 medium Onion
  • 1 tbsp Beef Bouillon Powder or vegetable bouillon
  • 1/2 tsp Cayenne Pepper adjust to taste
  • 2 tbsp Olive Oil
  • 1 tsp Salt adjust to taste
  • 1/2 tsp Black Pepper fresh ground
  • 3 cups Water & Stock/Broth chicken or vegetable stock preferred

Method
 

How to Make Mafe (Maafe)
  1. Wash and cut the stew beef into smaller pieces for even cooking.
  2. Heat olive oil in a pan over medium heat, add the beef with black pepper and a pinch of salt. Sauté for 8-10 minutes, until the meat is browned.
  3. Chop the onion and red bell pepper, then add them to the pan. Sauté for an additional 3 minutes.
  4. Stir in the tomato paste and let it cook for 5 minutes.
  5. Pour in water, stock, and add beef bouillon powder and cayenne pepper, adjusting salt to taste. Bring to a boil and cook for 5 minutes.
  6. Stir in the peanut butter until it’s fully dissolved. Let it simmer until the stew thickens, around 2-5 minutes.
  7. Enjoy your Mafe over cauliflower rice or regular rice.
