Filling Ingredients
  • 500 grams Ground Pork or substitute with shrimp or chicken
  • 1 large Egg optional for vegan
  • 2 tablespoons Coriander Roots or fresh cilantro stems
  • 1 teaspoon Black Peppercorns or ground black pepper
  • 3 cloves Garlic or garlic powder
  • 1 cup Carrots finely chopped; can use bell peppers
  • 4 stalks Green Onions or chives
  • 50 grams Dried Shiitake Mushrooms soaked, or substitute with other dried mushrooms
  • 3 tablespoons Golden Mountain Sauce or mix oyster and soy sauce
  • 1 tablespoon White Sugar adjust to taste
  • 2 tablespoons Oyster Sauce or mushroom sauce for vegetarian
  • 2 tablespoons Cornstarch or tapioca starch as an alternative
Wrapper Ingredients
  • 20 pieces Dumpling Wrappers or gluten-free wrappers if necessary
Finishing Touches
  • 1 tablespoon Sesame Oil or light vegetable oil
  • 1 tablespoon Garlic Oil or regular oil if garlic isn't preferred
  • 2 tablespoons Crispy Fried Garlic or crispy fried onion bits

Method
 

Filling Preparation
  1. Start by pounding the coriander roots, black peppercorns, and garlic in a mortar and pestle until fine.
  2. In a bowl, combine the golden mountain sauce, white sugar, sesame oil, and oyster sauce. Mix gently until well combined.
  3. Blend the ground pork with the sauce mixture, egg, and tapioca starch until smooth.
  4. Mix in the crushed spices and finely diced vegetables to the pork mixture.
Dumpling Assembly
  1. Place a wonton wrapper in a spoon, add about a tablespoon of the filling, and moisten the edges with water. Fold, pinch, and seal well.
  2. Line a steamer with parchment paper, arrange the dumplings without crowding, and steam for 10 minutes.
Serving Suggestion
  1. Serve hot with a side of spicy Thai chili sauce if desired.
