Ingredients
  

For the Chicken
  • 1 pound chicken breasts boneless and skinless
  • 1 tablespoon cornstarch for coating the chicken
For the Stir-Fry
  • 1/4 cup vegetable oil for frying
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 medium green zucchini sliced into half moons
  • 4 ounces mushrooms thinly sliced
  • 3 cups broccoli florets
  • 1 can bamboo shoots drained
For the Sauce
  • 1/2 cup chicken broth low-sodium
  • 1 teaspoon cornstarch for thickening
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sugar
  • 1 tablespoon Sambal Oelek chili paste for spiciness

Equipment

Method
 

Cooking Instructions
  1. Coat the Chicken by adding chicken and cornstarch to a ziplock bag, seal, and shake until coated.
  2. Heat vegetable oil in a pan on medium-high heat, add chicken and cook for 2-3 minutes per side until golden brown.
  3. Mix the Sauce by whisking together chicken broth, cornstarch, soy sauce, oyster sauce, rice wine vinegar, sugar, and Sambal Oelek.
  4. Sautéing the Veggies: Remove chicken and add garlic, ginger, zucchini, mushrooms, broccoli, and bamboo shoots, stir-fry for 2-3 minutes.
  5. Combine and Thicken by putting cooked chicken back in pan, pour sauce over, toss and cook for 1-2 minutes until thickened.
