  • 2 cups Sweet Onions thinly sliced, like Vidalia
  • 1 tablespoon Sugar
  • 1 teaspoon Sea Salt
  • 1/4 cup Dry Sherry or substitute with white wine
  • 2 dashes Tabasco Sauce to taste
  • 1 tablespoon Chopped Fresh Thyme fresh preferred
  • 1 cup Gruyere Cheese shredded
  • 1 cup Sour Cream or Greek yogurt
  • 1/2 cup Mayo full-fat recommended

Preparation
  1. Caramelize the Onions: In a skillet, cook thinly sliced sweet onions and diced bacon over low heat. Stir frequently for about 30-40 minutes until the onions are deeply golden and soft.
  2. Mix Ingredients: In a large bowl, combine the caramelized onions, cooked bacon, sugar, sea salt, dry sherry, Tabasco sauce, chopped thyme, Gruyere cheese, sour cream, and mayo. Stir gently until everything is well mixed.
  3. Transfer to Baking Dish: Pour the mixture into a baking dish or cast-iron skillet.
  4. Bake: Preheat your oven to 375°F (190°C) and bake for 25-30 minutes until bubbly and golden brown.
  5. Serve: Let it cool slightly and serve warm with your choice of dippers.
