Method
 

Preparation
  1. Begin by slicing the sirloin beef into thin strips and chopping your vegetables uniformly for even cooking. In a bowl, combine cornstarch with soy sauce, white pepper, and Shaoxing wine to create the marinade for the beef.
  2. For the sauce, mix beef stock, cornstarch, brown sugar, oyster sauce, and sesame oil together in another bowl.
Cooking
  1. Coat the sliced beef with the marinade, making sure every piece is well covered. Let it sit for about 15 minutes.
  2. Heat a wok or skillet over medium-high heat and add a splash of oil. Sauté harder vegetables like carrots and broccoli for about 3-4 minutes. Remove these and set them aside.
  3. Add softer vegetables like bell peppers, cooking them until tender, about 2-3 minutes.
  4. In the same pan, add the marinated beef, stir frying until browned, about 3-5 minutes. Pour in the prepared stir fry sauce and simmer until thickened.
  5. Bring all the sautéed vegetables back into the pan and toss everything together. Serve immediately.
