Preparation
- Begin by slicing the sirloin beef into thin strips and chopping your vegetables uniformly for even cooking. In a bowl, combine cornstarch with soy sauce, white pepper, and Shaoxing wine to create the marinade for the beef.
- For the sauce, mix beef stock, cornstarch, brown sugar, oyster sauce, and sesame oil together in another bowl.
Cooking
- Coat the sliced beef with the marinade, making sure every piece is well covered. Let it sit for about 15 minutes.
- Heat a wok or skillet over medium-high heat and add a splash of oil. Sauté harder vegetables like carrots and broccoli for about 3-4 minutes. Remove these and set them aside.
- Add softer vegetables like bell peppers, cooking them until tender, about 2-3 minutes.
- In the same pan, add the marinated beef, stir frying until browned, about 3-5 minutes. Pour in the prepared stir fry sauce and simmer until thickened.
- Bring all the sautéed vegetables back into the pan and toss everything together. Serve immediately.
