Ingredients

For the Marinade
  • 1 lb boneless, skinless chicken breasts or thighs Choose thighs for juicier bites or breasts for a leaner option.
  • 2 tablespoons olive oil Enhances moisture and helps the spices adhere beautifully.
  • 1 tablespoon white wine vinegar Adds a tangy brightness that pairs perfectly with the chicken.
  • 4 large garlic cloves, minced Fresh garlic infuses a rich, aromatic flavor into the marinade.
  • 3 tablespoons Greek seasoning A delightful blend that captures the essence of Greece.
  • 1 large lemon, juiced Fresh lemon juice brightens the marinade and tenderizes the chicken.
  • 0.5 teaspoon salt Enhances all the flavors.
  • 0.5 teaspoon freshly cracked black pepper Adds a touch of warmth and depth to the marinade.

Equipment

  • grill
  • ziplock bag
  • Skewers

Method

Cooking Instructions
  1. Combine all the marinade ingredients in a ziplock bag. Add the chicken pieces and seal the bag, then shake gently to ensure every piece is well-coated. Marinate in the refrigerator for at least 6 hours, or for best results, overnight.
  2. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, discarding any leftover marinade.
  3. Thread the marinated chicken onto skewers, leaving a little space between each piece for even cooking. Grill for about 10-15 minutes, turning occasionally, until it’s golden brown and reaches an internal temperature of 165°F.
  4. Rest the skewers for 5 minutes wrapped in foil to allow the juices to redistribute.
