Preparation
  1. Prepare the Marinade: Slice the pork shoulder into ¼ inch pieces. In a large bowl, combine brown sugar, pineapple juice, soy sauce, vinegar, minced garlic, salt, black pepper, and if using, the red food coloring. Mix well until smooth.
  2. Marinate the Pork: Generously coat the pork slices with the marinade. Cover the bowl and refrigerate for at least 24 hours.
  3. Cook the Pork: Heat oil in a pan over medium-low heat. Add the marinated pork slices and cook for 10-12 minutes, flipping every minute until caramelized.
  4. Serve the Delight: Plate the Pork Tocino alongside garlic fried rice and a fried egg for an authentic breakfast experience.
