How to Make Enfrijoladas
- In a blender, combine black beans, water, garlic, cilantro, adobo sauce, cumin, paprika, chili powder, salt, pepper, and onion powder. Blend until smooth.
- Preheat your oven to 350°F (175°C) and grease a 9x13" casserole dish.
- Spoon a layer of black bean sauce into the bottom of the casserole dish.
- Wrap a stack of corn tortillas in damp paper towels and microwave for about 30 seconds until warm.
- Dip each tortilla into the black bean sauce, coat well, add cheese, roll, and place seam-side down in the dish.
- Repeat until tortillas are arranged in the dish.
- Pour any leftover black bean sauce over the rolled tortillas and sprinkle remaining cheese.
- Cover with aluminum foil and bake for 30 minutes.
