Ingredients
  

For the Sauce
  • 2 cups black beans or homemade black bean puree
  • 1 cup water or vegetable broth
  • 2 cloves garlic fresh
  • 1/4 cup chopped cilantro or parsley
  • 2 tablespoons adobo sauce or smoked paprika and cayenne
  • 1 teaspoon ground cumin or coriander
  • 1 teaspoon paprika or smoked paprika
  • 1 teaspoon chili powder adjust to heat preference
  • to taste kosher salt
  • to taste black pepper
  • 1 teaspoon onion powder
For Assembly
  • 8-12 pieces corn tortillas or flour tortillas
  • 1 cup freshly shredded Oaxaca cheese or Monterey Jack cheese, or vegan alternative

Method
 

How to Make Enfrijoladas
  1. In a blender, combine black beans, water, garlic, cilantro, adobo sauce, cumin, paprika, chili powder, salt, pepper, and onion powder. Blend until smooth.
  2. Preheat your oven to 350°F (175°C) and grease a 9x13" casserole dish.
  3. Spoon a layer of black bean sauce into the bottom of the casserole dish.
  4. Wrap a stack of corn tortillas in damp paper towels and microwave for about 30 seconds until warm.
  5. Dip each tortilla into the black bean sauce, coat well, add cheese, roll, and place seam-side down in the dish.
  6. Repeat until tortillas are arranged in the dish.
  7. Pour any leftover black bean sauce over the rolled tortillas and sprinkle remaining cheese.
  8. Cover with aluminum foil and bake for 30 minutes.
