Preparation Steps
- In a small bowl, combine whipped cream cheese, chopped green onion, and lemon zest. Stir until the mixture is smooth and uniform.
 - On a clean surface, place a piece of plastic wrap. Sprinkle Everything But The Bagel Seasoning (EBTB) evenly, and arrange overlapping slices of smoked salmon to form a rectangle.
 - Gently spread the cream cheese mixture over the salmon, then layer cucumber and avocado slices in the center.
 - Using the plastic wrap as aid, carefully roll the salmon away from you to encapsulate the filling tightly.
 - Place the rolled salmon in the freezer for about 5-10 minutes.
 - Remove from plastic wrap, slice into desired thickness, and serve with optional citrus soy sauce.
