Preparation
- Rinse the chicken under cold running water and soak it in a bowl of water mixed with lemon or lime juice for about 10 minutes.
- Sprinkle the chicken with salt, black pepper, and a splash of your chosen lemon or lime juice. Marinate for at least 30 minutes.
- Heat oil in a large stockpot over medium heat, add chopped onion, bell pepper, and minced garlic, and cook until the onions are translucent, about 3–4 minutes.
- Add the seasoned chicken to the pot, browning it lightly on all sides for about 5–7 minutes.
- Add diced potatoes, sliced carrots, corn, allspice, bay leaves, hot pepper, and fresh thyme. Pour enough water to cover the ingredients, approximately 8–10 cups, and bring to a gentle boil.
- Reduce heat and let it simmer uncovered for 45–60 minutes, until the chicken is tender and the vegetables are soft.
- Remove bay leaves and hot pepper. Add fresh lemon or lime juice to taste, and adjust salt and pepper. Stir in chopped parsley.
