  • 2–3 pounds chicken wings and drumsticks Bone-in is preferred for richer flavor.

  • 1 ear corn, cut into 3–4 pieces Optional but traditional.
For the Aromatics
  • 3 cloves garlic, minced Infuses the soup with aroma.
  • 1 teaspoon whole allspice Or 1/2 teaspoon ground.
  • 2 bay leaves Creates layered flavor.
  • 1 teaspoon black pepper Adds essential kick.
  • Salt to taste Adjust seasoning as needed.
  • 1–2 small hot peppers Optional, whole.
For the Fresh Touch
  • 2 lemons or limes, juiced Brightens the soup.
  • 2–3 sprigs fresh thyme Adds earthiness.
  • 2 tablespoons chopped fresh parsley Finishing touch.

Preparation
  1. Rinse the chicken under cold running water and soak it in a bowl of water mixed with lemon or lime juice for about 10 minutes.
  2. Sprinkle the chicken with salt, black pepper, and a splash of your chosen lemon or lime juice. Marinate for at least 30 minutes.
  3. Heat oil in a large stockpot over medium heat, add chopped onion, bell pepper, and minced garlic, and cook until the onions are translucent, about 3–4 minutes.
  4. Add the seasoned chicken to the pot, browning it lightly on all sides for about 5–7 minutes.
  5. Add diced potatoes, sliced carrots, corn, allspice, bay leaves, hot pepper, and fresh thyme. Pour enough water to cover the ingredients, approximately 8–10 cups, and bring to a gentle boil.
  6. Reduce heat and let it simmer uncovered for 45–60 minutes, until the chicken is tender and the vegetables are soft.
  7. Remove bay leaves and hot pepper. Add fresh lemon or lime juice to taste, and adjust salt and pepper. Stir in chopped parsley.
