  • 2 tablespoons Worcestershire Sauce Soy sauce can be used as a substitute.

  • 5 medium Radishes Slice thinly for extra zing.
  • 6 tortillas Corn Tortillas Warm them for a delightful pairing.

Method
 

Cooking Instructions
  1. Cook the bacon in a large pot over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate, reserving drippings.
  2. Slice the beef thinly and season with salt and pepper. Add to the pot and brown on all sides, approximately 3-5 minutes.
  3. In a blender, combine tomatillos, cilantro, onion, garlic, serrano, coriander, salt, and 1 cup of beef broth. Blend until smooth.
  4. Pour the blended sauce and remaining beef broth into the pot. Stir and bring to a gentle simmer.
  5. Cover and cook until the beef is tender, about 35 minutes.
  6. Stir in drained pinto beans and Worcestershire sauce. Adjust seasoning as desired.
  7. Ladle the stew into bowls and garnish with crispy bacon, avocado, cilantro, and radishes. Serve with tortillas and lime wedges.
