- Cook the bacon in a large pot over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate, reserving drippings.
- Slice the beef thinly and season with salt and pepper. Add to the pot and brown on all sides, approximately 3-5 minutes.
- In a blender, combine tomatillos, cilantro, onion, garlic, serrano, coriander, salt, and 1 cup of beef broth. Blend until smooth.
- Pour the blended sauce and remaining beef broth into the pot. Stir and bring to a gentle simmer.
- Cover and cook until the beef is tender, about 35 minutes.
- Stir in drained pinto beans and Worcestershire sauce. Adjust seasoning as desired.
- Ladle the stew into bowls and garnish with crispy bacon, avocado, cilantro, and radishes. Serve with tortillas and lime wedges.
