Ingredients
  

For the Prawns
  • 1000 g Large King Prawns or Tiger Prawns fresh or well-thawed
For the Garlic Butter
  • 70 g Butter can swap for vegan butter
  • 2 cloves Garlic finely chopped
  • 2 Bird's Eye Chillies finely chopped
  • 0.5 Tbsp Chopped Parsley or coriander
  • 0.5 Tbsp Chopped Coriander optional
For Finishing Touches
  • 1 Lemon for juicing and zesting
  • Salt and Pepper to taste

Method
 

Cooking Instructions
  1. Preheat the BBQ to high heat.
  2. Soften the butter at room temperature for at least 1 hour.
  3. Combine garlic, chillies, softened butter, parsley, coriander, and lemon zest in a mixing bowl.
  4. Butterfly the prawns by slicing down the back without cutting all the way through.
  5. Season the prawns with salt and pepper and drizzle with olive oil.
  6. Grill the prawns for about 3 minutes on one side, then flip, brush with garlic-chilli butter, and grill for another 2 minutes.
  7. Squeeze fresh lemon juice over the prawns before serving.
