- Prep Apples: Start by coring the Honeycrisp apples and slicing them into thin 1/8" thick pieces.
- Combine Ingredients: In a mixing bowl, toss the sliced apples with lemon zest and half of the honey.
- Roll and Shape Pastry: Unfold the thawed puff pastry and cut it into squares. Place a scoop of apple mixture in the center.
- Seal Bundles: Carefully fold the pastry over the filling, pinching edges to seal. Brush with beaten egg and sprinkle with flaky sea salt.
- Bake: Arrange bundles on a baking sheet and bake in a preheated oven at 400°F (200°C) for 20-25 minutes.
