  • 1 head Cauliflower Robust vegetable, can be substituted
  • 2 tablespoons Olive Oil Can use avocado oil

For the Mashed Sweet Potatoes
  • 700 g Large Sweet Potatoes Try Yukon gold potatoes
  • 110 mL Soy Cream Coconut cream can be used
  • 1 tablespoon Orange Zest Can use lemon zest
  • 2 tablespoons Vegan Butter Coconut oil can be an alternative
For the Protein Element
  • 1 cup Cooked Lentils Chickpeas or black beans are great substitutes
For Garnishing
  • 1 bunch Fresh Herbs (e.g., dill) Any fresh herb of choice
  • 1/2 cup Chopped Pistachios Can use almonds or walnuts

Method
 

Preparation Instructions
  1. Preheat your oven to 210°C (410°F).
  2. Slice the cauliflower into thick, even steaks about 1-inch thick.
  3. In a large mixing bowl, toss the cauliflower steaks with olive oil, garlic powder, salt, and pepper.
  4. Arrange the coated cauliflower steaks on a baking sheet and roast for about 30 minutes, flipping halfway.
  5. Peel and chop sweet potatoes into cubes, then boil in salted water for 15-20 minutes until fork-tender.
  6. Drain sweet potatoes and mash with soy cream, orange zest, vegan butter, salt, and pepper.
  7. Warm the pre-cooked lentils in a small saucepan, seasoning with salt and pepper.
  8. Assemble by creating a base of creamy mashed sweet potatoes, topping with roasted cauliflower and lentils.
  9. Garnish with fresh herbs and chopped pistachios.
