Ingredients

For the Salmon
  • 2 pounds skinless salmon fillet Ensure it’s fresh for the best flavor and texture.
  • 1 pinch kosher salt A pinch brings out the salmon’s natural taste.
  • 1 pinch black pepper Adds a bit of spice that complements the lime beautifully.
For the Topping
  • 1 large tomato Sliced into rounds for a fresh, juicy layer atop the salmon.
  • 4 to 6 cloves garlic Chopped for a fragrant and savory kick.
  • 1 bunch fresh cilantro Roughly chopped, including tender stems for added flavor.
For the Sauce
  • 1/2 cup extra virgin olive oil Provides richness and helps blend the flavors.
  • 1 lime juiced Freshly squeezed juice is key for that bright, zesty taste.
  • 1 pinch kosher salt Adjust to your preference for a perfectly seasoned dish.

Equipment

  • baking pan
  • Food Processor

Method

Cooking Instructions
  1. Lightly oil a baking pan and arrange the skinless salmon fillet on top. Set aside at room temperature while you preheat the oven to 425°F and whip up the cilantro sauce.
  2. In a small food processor, combine the chopped garlic, fresh cilantro, olive oil, lime juice, and a pinch of kosher salt. Blend until everything is well combined and forms a smooth sauce.
  3. Sprinkle the salmon lightly with kosher salt and black pepper. Generously spoon the garlic-cilantro sauce over the salmon, spreading it evenly to coat. Lay the tomato and lime slices on top for added flavor and a pop of color.
  4. Carefully place the baking pan in the top half of the preheated oven. Bake until the thickest part of the salmon flakes easily with a fork, about 8 minutes for a 1-inch thick piece (internal temperature should reach 125°F to 130°F).
  5. Remove the baking pan and cover it loosely with foil. Allow the salmon to rest for another 5 to 8 minutes, which helps complete the cooking process.
  6. Dish up the salmon with extra garlic cilantro sauce on the side. Your delicious and refreshing Cilantro Lime Salmon is ready to enjoy!
