Ingredients

  • 2 cups Corn use cooked corn or frozen, thawed

  • 6 large Tortillas corn or flour
For the Filling
  • 2 cups Chopped Tomatoes seeded for freshness
  • 2.5 cups Cooked Chicken shredded or cubed
For the Cream Mixture
  • 1 cup Heavy Cream adds richness
  • 0.25 cup Milk balances cream
  • 0.5 cup Mayonnaise binds the mixture
Seasoning
  • Salt and Pepper to taste
  • Chili Powder or Cayenne Pepper to taste
Optional Add-ons
  • 1 cup Greek Yogurt healthy topping
  • 0.5 cup Mozzarella Cheese for topping
  • 0.5 cup Monterrey Jack or Swiss Cheese for topping

Method
 

Preparation
  1. Preheat your oven to 350ºF (180°C).
  2. Prepare the baking dish by oiling or buttering a glass or ceramic dish, about 8x11 inches.
  3. Grate your cheeses and set them aside.
Cooking
  1. Sauté corn, onion, and jalapeño in a skillet with a little oil over medium/high heat until softened and slightly browned, about 5-7 minutes.
  2. Char tortillas one at a time in an oiled skillet until slightly charred, about 10-15 seconds per side.
  3. Mix the binding cream ingredients in a medium bowl, gently integrating them.
  4. Layer the prepared dish with tortillas, starting from the sides, then filling in the middle.
  5. Spread chopped tomatoes and cooked chicken evenly on top of the tortillas.
  6. Add the corn and onion mixture, spreading it over the chicken.
  7. Drizzle the binding cream mixture on top.
  8. Sprinkle the grated cheese over the top.
  9. Bake for about 45 minutes, until the top is golden brown.
  10. Serve hot, complementing with crema, sour cream, avocado slices, or a fresh green salad.
