  • 1 whole Free-range Chicken approx. 1.6 kg
  • 0.5 tsp Salt Essential for seasoning
For the Marinade
  • 1 tbsp Dark Soy Sauce Substitute with regular soy sauce for a milder taste
  • 1 tbsp Shaoxing Wine Substitute with dry sherry if unavailable
  • 1 tsp Ginger Juice Freshly grated ginger works well too
For the Sauce
  • 0.25 cup Black Vinegar Can be swapped for balsamic vinegar
  • 2 tsp Soy Sauce Balances sweetness with umami
  • 2 tsp Sugar Use brown sugar for deeper sweetness
  • 2 pcs Bird's Eye Chillies Adjust based on spice preference
  • 1 Coriander Root Finely chopped; can substitute with coriander stems
  • 4 cloves Garlic Finely chopped

Method
 

Preparation Steps
  1. Rub the whole chicken inside and out with salt.
  2. Pour boiling water over the chicken gently.
  3. Mix dark soy sauce, Shaoxing wine, and ginger juice. Massage onto chicken.
  4. Cover and marinate in the fridge overnight.
  5. Preheat oven to 200°C (392°F).
  6. Place chicken in a roasting pan; roast for 1 hour.
  7. Let the chicken rest for 15 minutes.
  8. Combine all sauce ingredients; mix in a splash of rendered chicken juices.
  9. Cut chicken into pieces, drizzle with sauce.
