Instructions for Roasted Spiralized Beets
  1. Preheat your oven to 400°F (200°C) to ensure it's perfectly hot for roasting those vibrant beet noodles.
  2. In a small bowl, combine olive oil, dark balsamic vinegar, honey, and Dijon mustard. Whisk until everything is nicely emulsified to create your tangy dressing.
  3. Using a spiralizer, slice your large beets into beautiful, noodle-like strands.
  4. Spread the spiralized beets onto a lined cookie sheet. Drizzle them with olive oil, and sprinkle sea salt and freshly ground black pepper over the top.
  5. Place the cookie sheet in your preheated oven and roast for 10-13 minutes, or until the beets are tender and slightly soft.
