Instructions for Roasted Spiralized Beets
- Preheat your oven to 400°F (200°C) to ensure it's perfectly hot for roasting those vibrant beet noodles.
- In a small bowl, combine olive oil, dark balsamic vinegar, honey, and Dijon mustard. Whisk until everything is nicely emulsified to create your tangy dressing.
- Using a spiralizer, slice your large beets into beautiful, noodle-like strands.
- Spread the spiralized beets onto a lined cookie sheet. Drizzle them with olive oil, and sprinkle sea salt and freshly ground black pepper over the top.
- Place the cookie sheet in your preheated oven and roast for 10-13 minutes, or until the beets are tender and slightly soft.
- Carefully transfer your roasted beets to a large bowl. Drizzle the prepared vinaigrette over them and give everything a gentle toss to coat evenly.
- Enjoy these roasted spiralized beets immediately while warm, or let them cool down to room temperature.
