Preparation Steps
  1. Preheat your oven to 400°F (200°C) and position the rack in the center.
  2. Peel the shallots and trim their ends, then arrange them in a baking dish.
  3. Drizzle with olive oil and balsamic vinegar, season with salt and pepper, and toss until well-coated.
  4. Scatter thyme or rosemary sprigs on top for added flavor.
  5. Roast for about 60 minutes, stirring halfway through; smaller shallots may be done in about 45 minutes.
  6. Once roasted, toss the shallots in butter until nicely coated and serve warm.
