  • 2 tablespoons Olive Oil For roasting

  • 2 tablespoons Red Wine Vinegar
  • 1 clove Garlic Minced

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss asparagus and radishes on a baking sheet with olive oil, salt, and pepper.

  4. Whisk together whole grain mustard, Dijon mustard, red wine vinegar, minced garlic, and olive oil until emulsified.
  5. Season the vinaigrette with salt and pepper to taste.
  6. Arrange the roasted vegetables on a platter and drizzle with the mustard vinaigrette.
  7. Serve warm or at room temperature.
