For the Sausage
  • 12 oz Chicken Sausage Any pre-cooked sausage variety can be used.
For the Veggies
  • 1 medium Red Bell Pepper Substitute with yellow or green bell pepper.
  • 1 medium Orange Bell Pepper Any color bell pepper can be used as a substitute.
  • 1 medium Red Onion Opt for yellow onion for a milder taste.
  • 1 medium Zucchini Can also replace with other soft-skinned vegetables.
For the Seasoning
  • 1 tbsp Avocado Oil Can be substituted with olive oil or any neutral oil.
  • 1 tsp Garlic Powder Fresh minced garlic can be used instead.
  • 1 tsp Onion Powder Consider adding extra fresh onion for more flavor.
  • 1 tsp Italian Seasoning Dried oregano or basil are good alternatives.
  • 1 tsp Kosher Salt Adjust to taste as needed.
  • 1 tsp Black Pepper White pepper can be used for a milder alternative.

Instructions
  1. Chop all veggies into 1-inch pieces and add them to a large bowl. Drizzle with avocado oil and toss gently to ensure they are coated evenly.
  2. In a separate bowl, combine garlic powder, onion powder, Italian seasoning, salt, and black pepper. Sprinkle this mixture over the veggies and toss well to incorporate the flavors.
  3. Slice the chicken sausage into ¾ inch rounds and mix it with the seasoned veggies in the bowl, ensuring everything is well-distributed.
  4. Preheat your air fryer to 390°F (200°C) and spray the basket with cooking spray.
  5. Spread the veggie and sausage mixture evenly in the air fryer basket. Cook for 10 minutes, flipping halfway through.
  6. Remove from the air fryer and serve immediately. Enjoy it on its own or with cauliflower rice or brown rice.
