  • 1 roll Puff Pastry store-bought
For the Chocolate Ganache
  • 100 g White Chocolate can swap with dark chocolate
For the Pistachio Cream
  • 150 g Blanched Pistachios can use almonds instead
  • 2 large Egg Yolks whisk until pale
  • 250 ml Whole Milk can use almond or oat milk
  • 20 g Cornflour can use all-purpose flour
  • 50 g Caster Sugar can substitute with granulated sugar
  • 1 tsp Vanilla Extract vanilla bean is a great choice
For Garnish
  • Crushed Pistachios for sprinkling

Method
 

How to Make Pistachio Supreme Croissants
  1. Prepare Puff Pastry: Roll out the puff pastry into a thin sheet and cut it into 2.5 cm wide strips that will fit perfectly into your baking rings.
  2. Shape Croissants: Gently roll each strip into a spiral shape, mimicking the twist of cinnamon rolls.
  3. Bake: Place the spirals in their respective baking rings and bake in a preheated oven at 160 °C for about 30 minutes until golden brown.
  4. Make Pistachio Cream: Mix egg yolks, caster sugar, and cornflour. Heat the milk until it boils, then gradually add to the mixture, stirring constantly for 7 minutes until thickened. Blend in the pistachios until smooth.
  5. Fill Croissants: Cut a small hole at the top of each croissant and fill with the pistachio cream using a piping bag.
  6. Final Touch: Drizzle melted white chocolate ganache over the croissants and sprinkle with crushed pistachios.
