Equipment

  • Large Bowl

Method

Preparation Steps
  1. Prepare the Dough: Begin by preparing your pie dough. If you're making it from scratch, allow it to rest in the fridge for at least 30 minutes.
  2. Mix the Filling: Toss peaches with raw sugar, whiskey (or lemon juice), and salt. Let sit for at least 30 minutes.
  3. Thicken the Juices: Strain the peach mixture, saving the juices. Combine juices with cornstarch in a saucepan and stir over medium heat until thickened.
  4. Combine Ingredients: Return thickened juices to the peaches and fold everything together.
  5. Assemble the Pie: Fit dough into a pie dish, pour in the filling, and create a lattice top.
  6. Prepare for Freezing (Optional): Chill the assembled pie, then wrap for storage.
  7. Preheat and Egg Wash: Preheat oven to 425°F, brush lattice with egg wash, and sprinkle sugar on top.
  8. Bake the Pie: Bake at 425°F for 30 minutes, then reduce to 350°F for an additional 45 minutes to 1.5 hours.
  9. Cool Down: Allow the pie to cool completely on a wire rack before slicing.
