- Preheat the oven to 375°F (190°C).
- Heat avocado oil in a heavy-bottomed, oven-safe skillet over high heat.
- Sear the pork tenderloins for 3-4 minutes on each side until beautifully golden brown, then set aside.
- Reduce the heat to medium-low, add sliced onion and rosemary, cooking until onions are lightly golden, about 5 minutes.
- Stir in brown sugar, apple cider vinegar, Dijon mustard, and diced peaches, cooking for a minute until combined.
- Return seared pork to the skillet, coating well with the peach mixture. Bake for 10 minutes or until internal temperature reaches 145°F (63°C).
- Rest pork for 5-10 minutes before slicing and serve topped with the luscious peach glaze.
