For the Pork
  • 2 tablespoons Avocado Oil Cooking fat for searing; olive oil is a great substitute if needed.
  • 2 pounds Pork Tenderloins Choose fresh cuts for the best results.
  • 1 teaspoon Salt Kosher or sea salt works best.
  • 1 teaspoon Pepper Freshly ground black pepper elevates the taste.
For the Glaze
  • 1 large Yellow Onion Can swap for shallots for a milder flavor.
  • 2 sprigs Fresh Rosemary If using dried, use less as it’s more potent.
  • 1/2 cup Brown Sugar Coconut sugar is a wholesome alternative.
  • 1/4 cup Apple Cider Vinegar White vinegar can be used in a pinch.
  • 2 tablespoons Dijon Mustard Whole grain mustard can also work beautifully.
  • 2 large Peaches Frozen peaches can substitute when fresh aren't available.
For Serving
  • 2 cups Rice Both white and brown rice are great options.
  • 2 cups Green Beans Sauté for added flavor.
  • 1 large Fresh Salad A light, refreshing addition.

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Heat avocado oil in a heavy-bottomed, oven-safe skillet over high heat.
  3. Sear the pork tenderloins for 3-4 minutes on each side until beautifully golden brown, then set aside.
  4. Reduce the heat to medium-low, add sliced onion and rosemary, cooking until onions are lightly golden, about 5 minutes.
  5. Stir in brown sugar, apple cider vinegar, Dijon mustard, and diced peaches, cooking for a minute until combined.
  6. Return seared pork to the skillet, coating well with the peach mixture. Bake for 10 minutes or until internal temperature reaches 145°F (63°C).
  7. Rest pork for 5-10 minutes before slicing and serve topped with the luscious peach glaze.
