Crust

Method
 

Preparation
  1. Preheat the oven to 350°F if baking the crust. Prepare a baking pan lined with parchment paper.
  2. Crush graham crackers and mix them with melted butter and sugar if opting for a baked crust. Press into the bottom of your pan and bake for 10 minutes. Let cool if not baking.
  3. Chill a mixing bowl and beaters in the freezer for about 15 minutes.
  4. Whip the heavy cream in your chilled bowl until stiff peaks form. Set aside.
  5. Beat the cream cheese and sugar together until smooth and creamy.
  6. Fold the whipped cream into the cream cheese mixture gently.
  7. Layer the cream cheese mixture into the pan, then place sliced strawberries and blueberries on top to create a flag pattern.
  8. Chill the assembled cheesecake for at least 4 hours or overnight.
