Preparation
- Preheat the oven to 350°F if baking the crust. Prepare a baking pan lined with parchment paper.
- Crush graham crackers and mix them with melted butter and sugar if opting for a baked crust. Press into the bottom of your pan and bake for 10 minutes. Let cool if not baking.
- Chill a mixing bowl and beaters in the freezer for about 15 minutes.
- Whip the heavy cream in your chilled bowl until stiff peaks form. Set aside.
- Beat the cream cheese and sugar together until smooth and creamy.
- Fold the whipped cream into the cream cheese mixture gently.
- Layer the cream cheese mixture into the pan, then place sliced strawberries and blueberries on top to create a flag pattern.
- Chill the assembled cheesecake for at least 4 hours or overnight.
