Ingredients
  

For the Fish
  • 1 whole Branzino or similar mild white fish
  • 2 tablespoons Melted butter can substitute with olive oil
  • 2 tablespoons Olive oil or avocado oil
  • to taste Sea salt
  • to taste Black pepper
For the Seasoning
  • 1 teaspoon Garlic powder or fresh garlic
  • 1 teaspoon Dry oregano or thyme/rosemary
  • 1 teaspoon Paprika smoked paprika for deeper taste
  • 2 tablespoons Fresh lemon juice fresh lemons are best
For the Stuffing
  • 2 cloves Garlic minced
  • 1 medium Onion sliced, optional
  • 1 whole Lemon for stuffing
  • 2 tablespoons Dry parsley or fresh herbs like dill or cilantro
For the Veggies and Potatoes
  • 1/2 cup White wine or chicken broth or vegetable broth
  • 2 cups Potatoes thinly sliced or cubed
  • 1 cup Bell peppers any seasonal veggies

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Rinse the branzino under cold water and pat dry with paper towels.
  3. Score the sides of the fish by making slits about an inch apart.
  4. Mix together melted butter, olive oil, garlic powder, oregano, paprika, fresh lemon juice, salt, and pepper in a small bowl.
  5. Brush the seasoned mixture generously over the branzino, both inside the cavity and on the skin.
  6. Stuff the cavity of the fish with minced garlic, onion slices, and lemon slices. Insert a few lemon slices into the slits as well.
  7. Arrange sliced bell peppers and potatoes around the fish on a lightly oiled baking sheet.
  8. Drizzle white wine or chicken broth over the veggies and fish. Dust the remaining seasoning mix over everything.
  9. Bake uncovered for about 30 minutes.
  10. Finish by drizzling with additional lemon juice before serving and garnishing with fresh herbs.
