Preparation
- Preheat the oven to 400°F (200°C).
- Rinse the branzino under cold water and pat dry with paper towels.
- Score the sides of the fish by making slits about an inch apart.
- Mix together melted butter, olive oil, garlic powder, oregano, paprika, fresh lemon juice, salt, and pepper in a small bowl.
- Brush the seasoned mixture generously over the branzino, both inside the cavity and on the skin.
- Stuff the cavity of the fish with minced garlic, onion slices, and lemon slices. Insert a few lemon slices into the slits as well.
- Arrange sliced bell peppers and potatoes around the fish on a lightly oiled baking sheet.
- Drizzle white wine or chicken broth over the veggies and fish. Dust the remaining seasoning mix over everything.
- Bake uncovered for about 30 minutes.
- Finish by drizzling with additional lemon juice before serving and garnishing with fresh herbs.
