Cooking Steps
  1. Preheat your oven to 350°F (175°C). This is the perfect temperature to create a delicious, juicy chicken dish while allowing the flavors to meld beautifully.
  2. Season the chicken thighs on all sides with half of the salt, pepper, oregano, garlic powder, and paprika.
  3. Cook the pancetta in a large sauté pan over medium heat until crispy, about 3 minutes. Remove from the pan and drain on paper towels.
  4. Sear the chicken thighs in the same pan for 1-2 minutes on each side until golden brown. Set them aside once done.
  5. Sauté shallots in the same pan for about 2 minutes, then add minced garlic and cook for another 2 minutes until fragrant.
  6. Deglaze the pan with chicken broth, scraping up any browned bits for extra flavor. Let simmer for 3 minutes, then stir in the butter and honey.
  7. Return the chicken to the pan and spoon the sauce over. Cover with a lid or foil and bake for 15 minutes.
  8. Add peach slices on top and spoon more sauce over them. Cover the pan again and broil for an additional 3-5 minutes until the peaches are soft.
  9. Serve immediately, garnished with fresh basil, thyme, sea salt, and cracked pepper.
