Cooking Steps
- Preheat your oven to 350°F (175°C). This is the perfect temperature to create a delicious, juicy chicken dish while allowing the flavors to meld beautifully.
- Season the chicken thighs on all sides with half of the salt, pepper, oregano, garlic powder, and paprika.
- Cook the pancetta in a large sauté pan over medium heat until crispy, about 3 minutes. Remove from the pan and drain on paper towels.
- Sear the chicken thighs in the same pan for 1-2 minutes on each side until golden brown. Set them aside once done.
- Sauté shallots in the same pan for about 2 minutes, then add minced garlic and cook for another 2 minutes until fragrant.
- Deglaze the pan with chicken broth, scraping up any browned bits for extra flavor. Let simmer for 3 minutes, then stir in the butter and honey.
- Return the chicken to the pan and spoon the sauce over. Cover with a lid or foil and bake for 15 minutes.
- Add peach slices on top and spoon more sauce over them. Cover the pan again and broil for an additional 3-5 minutes until the peaches are soft.
- Serve immediately, garnished with fresh basil, thyme, sea salt, and cracked pepper.
