- In a large skillet over medium heat, add your seasoned chicken thighs or breasts. Sear for about 5 minutes on each side until they’re nicely browned.
- In a bowl, mix together the BBQ sauce and honey until smooth. Pour this mixture over the seared chicken, ensuring it’s well-coated.
- Toss in the long-grain rice and chicken broth to the skillet. Give it a gentle stir to combine everything evenly.
- Turn the heat up slightly until you reach a gentle simmer, then cover with a lid and reduce the heat to low. Cook for approximately 20 minutes.
- Add your mixed vegetables to the skillet during the last 5 minutes of cooking. Cover again to allow the veggies to steam.
- Once cooked, remove the skillet from heat and let it rest for about 5 minutes. Fluff the rice and mix in the chicken and veggies before serving.
