  • 1 cup Butter unsalted
  • 1 cup Light Brown Sugar
  • 1 teaspoon Vanilla high-quality
  • 1 cup All-Purpose Flour can substitute with gluten-free flour
For the Topping
  • 1 can Well-drained Crushed Pineapple ensure well-drained
  • 1/4 cup Melted Butter
  • 1 cup Sugar
  • 2 large Eggs
  • 1 cup Shredded Coconut sweetened or unsweetened

Method
 

Baking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cream together the butter, light brown sugar, and vanilla in a mixing bowl until smooth and airy.
  3. Combine the all-purpose flour gradually, mixing until well integrated. Press evenly into a greased 9x13" pan.
  4. Bake for 15 minutes or until the crust turns golden brown. Let cool for about 5 minutes.
  5. Mix together melted butter, sugar, eggs, vanilla, and shredded coconut in the same bowl.
  6. Spread the well-drained crushed pineapple over the crust, then layer the coconut mixture on top.
  7. Bake again for another 30 minutes until golden on top.
  8. Cool completely in the pan before cutting into squares.
