  • 2 large Eggs Feel free to use quail, duck, or chicken eggs.
  • 1 tablespoon Butter For greasing the cocottes.
  • 1/4 cup Heavy Cream Adds richness.
  • to taste Sea Salt
  • to taste Freshly Ground Black Pepper
For the Savory Fillings
  • 1 slice Prosciutto Or substitute with ham or bacon.
  • 2 ounces Smoked Salmon Pairs beautifully with eggs.
  • 1/2 cup Mushrooms Sautéed (Oyster, Shiitake preferred).
  • 1 tablespoon Fresh Herbs Tarragon, Chives, or Thyme.
  • 1 cup Spinach Use well-drained frozen spinach if preferred.
  • 2 ounces Goat’s Cheese Feta can be used as a milder option.

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Grease each cocotte (ramekin) with butter.
  3. Line the edges with prosciutto, then add sautéed mushrooms or smoked salmon.
  4. Crack 1 to 2 eggs into each prepared dish and pour in heavy cream.
  5. Season with salt, pepper, and sprinkle fresh herbs on top.
  6. Place the cocottes into a baking dish and add hot water to the dish until halfway up the sides of the cocottes.
  7. Bake for 10-15 minutes until the egg whites set but yolks remain runny.
  8. Remove from the oven and garnish with herbs.
