For the Pork Belly
  • 1 kg Pork Belly Choose a cut with a good balance of fat and meat.
  • 1/4 cup Soy Sauce Tamari is a gluten-free alternative.
  • 1/4 cup Shaoxing Wine Substitute with dry sherry if needed.
For the Marinade
  • 1 tbsp Five Spice Powder Essential for authentic flavor.
  • 2 tbsp Sugar Brown sugar is recommended.
  • 1 tbsp Ginger Fresh ginger is preferred.
  • 4 cloves Garlic Fresh crushed garlic is recommended.

Method
 

Preparation
  1. Score the skin of the pork belly in a crosshatch pattern and season with salt and pepper.
  2. In a bowl, mix together soy sauce, Shaoxing wine, five spice powder, sugar, ginger, and garlic.
  3. Marinate the pork belly in the mixture for at least 4 hours, preferably overnight.
Cooking
  1. Preheat your oven to 425°F and roast the pork belly skin-side up for 30 minutes.
  2. Reduce the temperature to 350°F and continue roasting for another hour.
  3. Let the pork belly rest for 10-15 minutes before slicing.
