Method
 

Preparation
  1. Preheat your oven to 180°C / 350°F.
  2. Whisk together the egg and milk in a mixing bowl, then incorporate semolina and crumbled feta. Season with salt and pepper.
  3. Prepare your work surface by laying out one filo sheet, then brush it lightly with olive oil. Repeat with another filo sheet.
  4. Spread a thick line of the creamy filling along one narrow side of the stacked filo sheets.
  5. Fold the edges of the filo over the filling to secure it tightly, then roll it into a log shape.
  6. Arrange the rolls on a greased baking tray, brush the tops with more olive oil, and poke a few holes.
  7. Bake for approximately 25 minutes, until golden brown. Let cool for 5-10 minutes before slicing.
