Preparation
- Preheat your oven to 180°C / 350°F.
- Whisk together the egg and milk in a mixing bowl, then incorporate semolina and crumbled feta. Season with salt and pepper.
- Prepare your work surface by laying out one filo sheet, then brush it lightly with olive oil. Repeat with another filo sheet.
- Spread a thick line of the creamy filling along one narrow side of the stacked filo sheets.
- Fold the edges of the filo over the filling to secure it tightly, then roll it into a log shape.
- Arrange the rolls on a greased baking tray, brush the tops with more olive oil, and poke a few holes.
- Bake for approximately 25 minutes, until golden brown. Let cool for 5-10 minutes before slicing.
