For the Ribs

Preparation
  1. Heat the oil in a non-stick saucepan over medium heat. Cook the minced garlic until it turns golden brown, then drain and reserve the flavorful oil for later.
  2. Bring the water to a boil in the same saucepan, then add the pork ribs. Boil for 5 minutes, discard the water, and rinse the ribs with cold water to remove impurities.
  3. In the non-stick saucepan, combine the pork ribs, ginger, soy sauce, oyster sauce, sugar, rice wine, and the water. Cover and let it simmer for about 60 minutes.
  4. Turn up the heat, remove the lid, and let the liquids evaporate until they thicken. Add the reserved garlic oil and sauté the pork ribs for about 5-10 minutes until shiny and sizzling.
  5. Stir in the chili powder and the fried garlic, giving everything a good mix before serving.
