Preparation
- Heat the oil in a non-stick saucepan over medium heat. Cook the minced garlic until it turns golden brown, then drain and reserve the flavorful oil for later.
- Bring the water to a boil in the same saucepan, then add the pork ribs. Boil for 5 minutes, discard the water, and rinse the ribs with cold water to remove impurities.
- In the non-stick saucepan, combine the pork ribs, ginger, soy sauce, oyster sauce, sugar, rice wine, and the water. Cover and let it simmer for about 60 minutes.
- Turn up the heat, remove the lid, and let the liquids evaporate until they thicken. Add the reserved garlic oil and sauté the pork ribs for about 5-10 minutes until shiny and sizzling.
- Stir in the chili powder and the fried garlic, giving everything a good mix before serving.
