  • 2 tablespoons Olive Oil Drizzled for flavor enhancement
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper
For the Cheese Filling
  • 200 grams Fresh Goat Cheese Can be substituted with ricotta or cottage cheese
For the Sweet Drizzle
  • 4 tablespoons Cane Honey Can substitute with dark honey or date syrup
For Optional Crunch
  • 3 tablespoons Toasted Pine Nuts Walnuts or almonds can also be used
For Garnishing
  • 1 bunch Fresh Thyme Or Microgreens for presentation

Method
 

Preparation Steps
  1. Preheat the Grill to medium-high.
  2. Brush both sides of the eggplant slices with olive oil, then sprinkle with sea salt and black pepper.
  3. Grill the eggplant for 2-3 minutes on each side until tender with char marks.
  4. Layer in a baking dish, starting with eggplant, then goat cheese. Repeat until 3-4 layers are made, finishing with eggplant.
  5. Drizzle cane honey on top, sprinkle with toasted pine nuts and fresh thyme.
  6. Serve warm or at room temperature, paired with white wine.
