- In a large mixing bowl, combine ground chicken, ranch seasoning mix, egg, breadcrumbs, and garlic powder. Stir gently until just blended; avoid overmixing to keep the meat tender.
- Using your hands, shape the mixture into golf ball-sized portions. Place the balls on a parchment-lined baking sheet, leaving some space between each for even cooking.
- Preheat your oven to 400°F (200°C). Lightly spray the tops with olive oil and bake in the preheated oven for 18-22 minutes, or until they turn a lovely golden brown.
- Once they are baked, remove the chicken bombs from the oven and add mozzarella on top of each one. Broil for 1-2 minutes until the cheese is bubbly and starts to turn golden.
- Sprinkle chopped parsley over the melted cheese and serve warm alongside your favorite dipping sauces, or with sides like mashed potatoes or fresh veggies.
