- Finely slice your onion and set it aside.
- Peel and grate the red potatoes using a box grater.
- Melt the butter and olive oil in a frying pan over medium heat.
- Add the onions and sauté until soft and translucent, about 10 minutes.
- Add grated potatoes to the pan, season with salt, and cook for about 15 minutes, tossing occasionally.
- Stir in cubed Montasio cheese, mixing until cheese starts to melt.
- Spread the potato mixture evenly in the pan and cook on one side for 6-7 minutes until golden brown.
- Flip the frico onto a plate and cook the other side for another 6 minutes until golden brown.
- Transfer to a serving board or plate and serve warm.
