For the Base
  • 4 medium Red potatoes peeled and grated
  • 200 g Montasio cheese cubed
  • 1 medium Onion finely sliced
For Cooking
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 1 tsp Salt

Method
 

Preparation
  1. Finely slice your onion and set it aside.
  2. Peel and grate the red potatoes using a box grater.
  3. Melt the butter and olive oil in a frying pan over medium heat.
  4. Add the onions and sauté until soft and translucent, about 10 minutes.
  5. Add grated potatoes to the pan, season with salt, and cook for about 15 minutes, tossing occasionally.
  6. Stir in cubed Montasio cheese, mixing until cheese starts to melt.
  7. Spread the potato mixture evenly in the pan and cook on one side for 6-7 minutes until golden brown.
  8. Flip the frico onto a plate and cook the other side for another 6 minutes until golden brown.
  9. Transfer to a serving board or plate and serve warm.
