  • 2 cups roasted tomatoes Use in-season tomatoes for the best taste.
For the Topping
  • 1 cup mozzarella cheese Use plant-based cheese for a dairy-free alternative.
  • 1/4 cup fresh basil Substitute with dried oregano if fresh basil isn't available.

Method
 

Steps to Prepare
  1. Preheat the oven to 400°F (200°C).
  2. Cook the farro according to package instructions until it’s tender, about 15-20 minutes.
  3. Marinate the chicken in balsamic dressing for at least 30 minutes, then sauté in a skillet until golden brown, about 5-7 minutes per side.
  4. Layer the cooked farro in a baking dish, followed by the roasted tomatoes and drained white beans.
  5. Place the sautéed chicken on top, garnish with torn mozzarella, and sprinkle with fresh basil.
  6. Bake for 25-30 minutes until the cheese is golden and bubbly.
  7. Serve warm, optionally garnished with additional fresh basil.
