Dough Preparation
  1. In a large bowl, combine strong white bread flour, water, yeast, sugar, and olive oil. Mix until roughly combined.
  2. Transfer the mixture onto a floured surface or use a mixer to knead the dough for about 10 minutes until smooth and elastic.
  3. Place the kneaded dough into a lightly oiled bowl, cover it, and allow it to rise at room temperature for 8 to 48 hours.
  4. After proofing, divide the dough into 4 equal portions for 12-inch pizzas, shaped into balls, and let them rest for 1-2 hours.
Sauce Preparation
  1. In a blender, combine tomatoes, a generous sprinkle of salt, and your choice of herbs. Blend until smooth, leaving a bit of texture.
Assembling and Baking
  1. On a floured surface, gently stretch each dough ball into a round shape, leaving thicker edges.
  2. Transfer the shaped dough onto a pizza peel, spread a layer of prepared sauce evenly, then add cheese and toppings.
  3. Preheat your oven to 260°C/500°F. Bake the pizza for 8-12 minutes until the crust is golden brown.
