- Heat oil in a pan over medium heat, add shrimp and minced garlic, and sauté until shrimp is pink and opaque, about 3-4 minutes.
- In a bowl, combine the shrimp mixture with mashed potatoes and chopped herbs, stirring until well-blended.
- Allow the mixture to cool for about 10 minutes, then shape into small balls or patties.
- Dip each croquette in beaten egg, then roll in panko breadcrumbs until coated.
- Heat oil in a frying pan until hot, then fry the croquettes until golden brown, about 3-4 minutes per side.
- Remove croquettes from oil and drain on paper towels. Serve warm with dipping sauce.
