  • 1 pound shrimp fresh or cooked, frozen
  • 2 cups mashed potatoes leftovers work well
  • 2 cloves garlic minced
  • 1 cup fresh herbs e.g., parsley, cilantro
For Coating
  • 1 cup breadcrumbs preferably panko
  • 1 large egg beaten
Seasoning
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Heat oil in a pan over medium heat, add shrimp and minced garlic, and sauté until shrimp is pink and opaque, about 3-4 minutes.
  2. In a bowl, combine the shrimp mixture with mashed potatoes and chopped herbs, stirring until well-blended.
  3. Allow the mixture to cool for about 10 minutes, then shape into small balls or patties.
  4. Dip each croquette in beaten egg, then roll in panko breadcrumbs until coated.
  5. Heat oil in a frying pan until hot, then fry the croquettes until golden brown, about 3-4 minutes per side.
  6. Remove croquettes from oil and drain on paper towels. Serve warm with dipping sauce.
