- Fold in mashed potatoes, heavy cream, and sour cream until just combined.
- Turn dough onto a floured surface and pat into a rectangle about 1-inch thick.
- Use a knife or biscuit cutter to cut dough into desired shapes.
- Brush tops with egg wash and sprinkle remaining chives.
