  • 1 cup light sour cream Greek yogurt can serve as a healthier option
For the Topping
  • ¾ cup Cotija cheese feel free to use feta cheese as a substitute

Preparation Steps
  1. Preheat your oven to 350°F and set the broiler for a bubbly finish later.
  2. Heat a skillet over medium heat and add the olive oil. Sauté the white and light-green parts of the scallions with a pinch of salt until they soften, about 2-3 minutes.
  3. Add the frozen corn kernels and seasoning mix to the skillet. Cook for 3-5 minutes until the corn is slightly tender.
  4. Incorporate the cream cheese into the mixture, stirring until it melts completely.
  5. Fold in the light sour cream and ¾ cup of Cotija cheese off the heat.
  6. Bake in the preheated oven for 10-12 minutes until the edges start bubbling.
  7. Broil for an additional 2-3 minutes until the cheese is golden brown.
  8. Garnish with reserved scallion greens and fresh cilantro, then serve immediately.
