- Rinse lemons, slice them in half, and scoop out the flesh to create serving cups. Reserve juice.
- In a saucepan, combine heavy cream, granulated sugar, and lemon zest. Stir over medium-low heat until sugar dissolves, about 5 minutes.
- Remove from heat and stir in reserved lemon juice and vanilla extract until well combined.
- Let cool for 10 minutes. Strain out zest for an ultra-smooth texture if desired.
- Spoon the mixture into lemon shells evenly. Refrigerate for 1-2 hours until set.
- Sprinkle granulated sugar over each filled lemon shell. Caramelize with a blowtorch just before serving.
