Ingredients
  

For the Pasta
  • 5 ounces dry pasta approx. 140 grams
For the Shrimp
  • 1 pound shrimp thawed and tails removed
  • 1 Tbsp olive oil for seasoning
  • 3 Tbsp olive oil divided for cooking
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes
  • salt to taste
  • pepper to taste
For the Aromatics
  • 5 cloves garlic minced
For the Greens
  • 4 cups spinach can substitute with kale or Swiss chard
For the Finish
  • 1/2 lemon lemon juice + zest
  • 1/4 cup fresh basil or parsley chopped
  • fresh Parmesan for serving (optional)

Method
 

Directions
  1. Prep Shrimp: Start by thawing the shrimp and removing their tails. In a bowl, toss them with 1 Tbsp of olive oil, smoked paprika, chili flakes, salt, and pepper, ensuring each shrimp is coated evenly.
  2. Cook Pasta: Bring a large pot of water to a boil. Cook the pasta according to package instructions until al dente, then drain it well, setting aside for later.
  3. Cook Shrimp: Heat a pan over medium-high heat. Add the seasoned shrimp and cook for 1-2 minutes on each side until they turn opaque. Remove them from the pan and set aside.
  4. Sauté Garlic: In the same pan, without cleaning it, add minced garlic and sauté for 2-3 minutes until it’s browned and fragrant.
  5. Add Spinach: Toss in the fresh spinach and stir until it wilts, taking about 1-2 minutes.
  6. Combine: Add the cooked pasta back into the pan with the shrimp, lemon zest, lemon juice, remaining olive oil, and fresh basil. Toss everything together, seasoning with salt and pepper to taste.
  7. Serve: Plate your Lemon Garlic Shrimp Pasta while it’s hot. Optionally, sprinkle freshly grated Parmesan on top.
